Paleo Mug Bread


Today was almost fall like! Soon as the rain came through  I got the urge to bake. But I was feeling lazy  didn't have that much time. Since I had apple butter, it had to be a bread. So Paleo Mug bread was in order.
There are a many variations out there, and I have tried many.  So many come up dry, but I also think my mile high altitude can effect the out comes. This combination I did today comes up light and crumbly. Its soft and stays together pretty well. Slapped some apple butter on there, and it was a delight.

Quick  Paleo Bread    Makes 4 slices

1/3 Cup Almond Flour
1 Tablespoon Coconut Flour
1/2 Teaspoon  Baking Powder
1/8 Salt
1 egg
2.5 Tablespoons of Coconut oil (Measure then melted)

1. Grease mug
2. Whip egg in a bowl
3. Add the rest of the ingredients, mix with fork.
4.  Pour into mug. Microwave for 90 seconds. The top should be firm, and slightly pulled away from sides.
5. Let stand for a moment, too hot it will crumble!
6. Flip mug over ( should slide out), and slice.

Paleo Bun for ONE!


This simple bun is a great simple base. I have used it with a burger, and in a breakfast biscuit.
There are variations, and add ins to suit your needs.
In the first attempt I used grass bed butter for a burger bun with chia seeds. For my breakfast biscuit I used walnut oil for a more fluffy crumbly texture.

Paleo Bun For One
1 Egg or 3 TBS Egg Whites
1 TBS Almond Flour
1 TBS Coconut Flour
1 TBS Coconut Oil (or melted grass fed butter, or walnut oil)
1/4 TSP Baking Powder
 Pinch of Himalayan Salt

Add ins: Chia, spices, seeds to compliment your protein.

Mix, let sit to thicken (mine always thickens in Colorado right away!) Scoop and form into two buns. Bake on oiled parchment paper @ 350 for 10 to 12 minutes until a nice golden brown, High altitude for me was 12 minutes.

 In this burger I used butter, and chia seeds.

Matcha, Blueberry smoothie

Spring forward happened, and boom! Spring weather happened. That means it's time for more cold drinks, lattes, and tea's. 

Try this mix of goodness below for a refreshing pick me up. That's better for you.
(124 calories when using same ingredients)*





Super Matcha green tea smoothie.
 
  • 8 oz unsweetened almond milk or cashew milk
  •  1/2 scoop vanilla protein powder (if a large scoop)*


 
  • 5g (1 teaspoon) premium ceremonial grade


 Matcha 

  • 1 TBS organic wheat grass



  • 1/4 cup of frozen organic blueberries 
(if you use fresh blueberries, add ice)


Blend ingredient in a blender.

♥Pink Power Protein Pancakes ♥

"Use one scoop of whey protein..."

The scoop factor... So there seems to be  no standard of "scoop" out there.  This can be frustrating,  I know. But I will be making a conscious effort to make sure I let you know how much my scoop is. Then there's the liquid to add, that's not always standard either. Because every powder is different it reacts to liquid differently. So always start at the suggested amount and go from there. No matter what recipe you are using there's always a bit of a learning curve. There will be a few batches that are just down right wrong. But with practice you will get the right consistency for your protein powder. Then you will go use a different powder, and mess it up. It just happens. 

So the second holidays are over, we jump right into Valentines *groan*. But, I am a lover and a Fighter... so I couldn't resist the epic cheesiness of Pink Pancakes! Why not. You love yourself right? You love your body right? You want to treat it right.... right? 
Well regardless of your answers, they're strawberry, relax. 

 3 TBS coconut flour
1/4 tsp baking powder
1 scoop of strawberry whey protein (mine measures approx. 1/4 cup, and 1 Tbs)
3 egg whites
1/4 cup unsweetened almond milk (or to pour able consistency)


Heat pan, or skillet, with oil. Healthy choice: coconut oil, or coconut oil or olive oil spray. Bring down heat to medium. Cook first side until it starts to bubble (about 2 minutes), or you can lift it to flip, and lightly brown. Other side will take less than 2 minutes. 
 This made me about 3 pancakes, none were same size... because that's how I roll.

More! Healthy Oatmeal Cookies 73 calories


So my cheat meal hates me. Well I think it's that my body hates my cheat meal. I don't really miss them but I thought it would be fun. Thought.
So its almost 6 hours after and I cannot imagine putting food into my body. Managed to make little meals for those in the house who survived cheat meal day (toddlers that's who). So all I could do was stare at my kitchen feeling slow and sluggish. Couldn't meal prep. Couldn't move. But I still wanted to feel viable here! So after drinking a couple of pints of water and some Amino Lift I started to think about making my quick cookies. Handy for the mornings, or just a nice little snack, so it's kind of like prep.
 I only had one banana, no worries, apple sauce to the rescue! For some reason these came out better than the banana and oatmeal ones.

 Here's what I used:

1 very ripe banana
1/2 cup applesauce (i just had original on hand)
1.5 cups of old fashioned oats
1 teaspoon cinnamon
1 teaspoon of stevia in the raw (or to taste)
1/2 cup golden raisins
1/4 chocolate chips

bake at 350 degrees, 20-23 minutes
makes about 14
14 cookies = 73 calories

Spicy Turkey and Sausage Paleo Soup


It's as good as it sounds. So versatile too. It can go many ways, soup, stew, and breakfast!
It just hits the spot, and freezes up great for left overs. You can make up any size batch, nothing is too exact with this. My measurements are more of what I did, it's not set in stone. 
It's hearty and healthy, enjoy.

1-2 Pounds of Ground Turkey
1 Pound of Jalapeno Sausage
1 large sweet potato (more or less)
3-4 cups of chicken broth (more for soup, less for stew)
1 can of organic tomatoes fire roasted pepper w/ green chilies (I used Muir Glen Organic)
1-2 cups baby carrots
1+ cups of bell peppers, I used red, yellow and green for color and taste. Use your favorite.
4-5 celery stalks
3-4 scallion/green onion (save the green for garnish)
3-4 garlic cloves, minced
3 tsp cumin
2 tsp chili powder
2 tsp coriander
2 tsp basil
1/4 cup fresh cilantro 
Salt & Pepper 

Peel and dice sweet potato. Slice your sausage. 
I mix all my spices in a bowl with the can of tomatoes before I add it to the crock pot. That way I can ensure every thing is soaked in flavor!
If you will be around while it's cooking give it a stir occasionally to make sure everything is distributed evenly.
I cooked on low for 8 hours. That should be the minimum time. For hearty stews I wouldn't recommend the 4 hours on high. You can, it just doesn't do it justice.

A fried egg and bacon is an amazing addition! Have a slice of Paleo Sandwich Bread to dunk!

Paleo Sandwich Bread


 My Paleo friends, rejoice, and have a sandwich

I have made a lot of Paleo bread, but there's only so much almond bread with almond butter I can take. They were all tasty, but ended up more like a cake. Not so much for just making a sandwich!

That dreaded meal; Lunch.

Sometimes I just make breakfast again, or just stick with one of my meal re-placers because I just don't have time to make a mess and cook for one, then have to cook for the family for dinner later. Some times I just want to take my lefts overs and stick it on bread! Well I found a recipe. I did a whole week of testing via Instagram. Funny enough it wasn't until the last day I made a left over sandwich.

 so it's bacon and eggs!                                                               
 Breakfast BLT !

*My personal note, I recommend an immersion blender for Paleo breads and cakes. Blending the almond butter, and honey is never easy. I now mix a lot of my breads and cakes in a bottle mixer using my immersion hand blender. You get a better flavor and consistancy. It's also an easier clean up! 

*If you like to toast your bread, don't over toast. It will burn very fast because of the egg content!


  • 3/4  almond butter, smooth (store bought works fine too)
  • 6 pastured eggs
  • 2 tbsp honey
  • 1/4 cup coconut oil, melted
  • 1/2 tsp apple cider vinegar
  • 1/4 cup golden flax, ground
  • 3 tbsp coconut flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • Instructions
    1. Preheat oven to 350°F. Line an 8 x 4" loaf pan with parchment, grease well with coconut oil.
    2. In a large bowl, blend the almond butter, eggs, honey, coconut oil and apple cider vinegar with an immersion blender.
    3. In a separate bowl, combine the flax, coconut flour, baking soda and sea salt. Mix the dry into the wet, pour into the greased and lined loaf pan and bake for 35-40 minutes.
    4. Remove from oven and allow to cool in pan 10 minutes. Remove from pan by pulling up on the parchment. Set on wire rack to cool completely.
    5. Store in an airtight container at room temperature for 3-4 days, in the fridge for 7-10 days or in the freezer for a month or so.

    Easy Lara bars, no bake, done in minutes.



    I loved my Homemade Kind Bars, but again I wanted to skip the oven and cut out rice syrup, and honey if I could. I also have a wicked rad new food processor (yes, it's worthy of me saying that). It was time to take these bars to a whole new level. Without the food processor you can't really get your dates and figs into a paste to use as your sticking agent. I first started off using my favorites, dried dates, and cranberries. After that I was just grabbing everything in sight! The best part you can get creative. In my Kind bars I used spices, and sea salt so I decided to adapt those into my bars also.


    You can switch many of these nut ingredients too. 

    1 cup raw Almonds
    1/2 cup raw Hazelnuts
    1/4 teaspoon of natural sea salt (you can also add cinnamon depending on your fruit mix)
    * Grind these up first and set aside. You want smaller bits so they mold better
    20 dates or figs or a mix
    1 cup of dried cranberries (or other dried fruit)
    2 tablespoons of unrefined, extra virgin coconut oil
    *Process these until they become a paste. Add this to your nut bowl and mix by hand, add coconut.
     1/2 cup finely shredded coconut, unsweetened (optional)


    Once mixed in the bowl by hand it comes together into a big ball.. I do recommend you have this next step prepared or you will be in a big mess. Use a cookie sheet with parchment paper, I lightly greased it with my coconut oil. Take your mixture and form one or two big balls. Depending on the density you can hand press them into bars or cover with more parchment paper and use a rolling pin. I started off by hand, but to even out the dents I gave it a few quick passes with the rolling pin. You are done my friend! Just cut into squares, store in refrigerator. It's very similar to the Homemade Kind Bars, but even more streamlined.
