Paleo Bun for ONE!


This simple bun is a great simple base. I have used it with a burger, and in a breakfast biscuit.
There are variations, and add ins to suit your needs.
In the first attempt I used grass bed butter for a burger bun with chia seeds. For my breakfast biscuit I used walnut oil for a more fluffy crumbly texture.

Paleo Bun For One
1 Egg or 3 TBS Egg Whites
1 TBS Almond Flour
1 TBS Coconut Flour
1 TBS Coconut Oil (or melted grass fed butter, or walnut oil)
1/4 TSP Baking Powder
 Pinch of Himalayan Salt

Add ins: Chia, spices, seeds to compliment your protein.

Mix, let sit to thicken (mine always thickens in Colorado right away!) Scoop and form into two buns. Bake on oiled parchment paper @ 350 for 10 to 12 minutes until a nice golden brown, High altitude for me was 12 minutes.

 In this burger I used butter, and chia seeds.

Two Ingredient Face Mask

There is no need to spend a large quantity of money on a small quantity on those expensive face creams. Save it for buying a good wheat grass, and end up with a huge quantity of healthy! I am sure you're aware wheat grass does good things for you from in the inside out. How about applying on the out side... Wheat grass can aid in skin call regeneration, complexion, treats eczema and skin discoloration. Hello fabulous! 
Now couple this with the power of raw honey, and this two-fer is legit! 
Honey alone is already amazing for your skin, loaded with antibacterial and anti fungal power. But it is a humectant, which will draw moisture into the skin. Raw honey will calm the redness and fade scars, how can you not be using this!
Putting these two together are a "no brainer" right!
Mix teaspoon of wheat grass, with a teaspoon and a half of raw honey. Add more if needed to make a good sticky consistency. Mine was pretty dry until I added more. Apply with a spatula or a face brush if you can.  I do keep a box of latex gloves around, they come in handy if you like to do face treatments.
Wear for up to 20 minutes, and try not to move too much! Your body heat will warm the honey and it will drip! Keep a towel handy. Wash off with luke warm water with a soft face towel. try not scrub it off. You will want a nice layer of honey residue, it will act as your moisturizer.

More! Healthy Oatmeal Cookies 73 calories


So my cheat meal hates me. Well I think it's that my body hates my cheat meal. I don't really miss them but I thought it would be fun. Thought.
So its almost 6 hours after and I cannot imagine putting food into my body. Managed to make little meals for those in the house who survived cheat meal day (toddlers that's who). So all I could do was stare at my kitchen feeling slow and sluggish. Couldn't meal prep. Couldn't move. But I still wanted to feel viable here! So after drinking a couple of pints of water and some Amino Lift I started to think about making my quick cookies. Handy for the mornings, or just a nice little snack, so it's kind of like prep.
 I only had one banana, no worries, apple sauce to the rescue! For some reason these came out better than the banana and oatmeal ones.

 Here's what I used:

1 very ripe banana
1/2 cup applesauce (i just had original on hand)
1.5 cups of old fashioned oats
1 teaspoon cinnamon
1 teaspoon of stevia in the raw (or to taste)
1/2 cup golden raisins
1/4 chocolate chips

bake at 350 degrees, 20-23 minutes
makes about 14
14 cookies = 73 calories

Breaking the rules. Paleo Inspired bread.

I don't like to follow the rules. But I am big into suggestions. I follow Paleo, but not perfectly. I just believe in: "whats good for me", and always making healthy choices.  I also believe in taking the time to go on a stay-cation and throw it all out the window too. Because that's just good for the soul!


I had to up date my favorite Paleo bread. I did it by breaking a Paleo rule (gasp! call the Paleo police). Yup, guilty. By using only egg whites and even substituting raw honey for honey substitute! The end result is actually a lighter, softer and less dense bread. This became a lovely soft moist loaf. It even rose a little more than before. I am pleased with this loaf for sure



  • 3/4  almond butter, smooth
  • ¾ cup + 3 tablespoons of liquid egg whites
  • 2 tbsp sugar free honey
  • 1/4 cup coconut oil, melted
  • 1/2 tsp apple cider vinegar
  • 1/4 cup golden flax, ground
  • 3 tbsp coconut flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt

Blend all your wet ingredients until smooth.
Mix dry ingredients in another bowl.
Slowly mix dry into wet.
Pour into a lined loaf pan. Grease your paper with coconut oil well.
Bake at 350 for 35-40 minutes. At 35 minutes check, over baking egg based bread can tend to burn quickly.


After it's cooled keep in sealed container in refrigerator. Yields 24 thin slices (great for snacking) or 12 regular slices (easier to toast).

No excuses, No worries, Have a cookie!

Good morning cookie.

Prep for this bad boy is one bowl, and a masher. In the morning we have 30 minutes to get toddlers and a husband out the door.  This is do-able. This is simple. This is also nothing new.
It is more of the reminder that you need to eat your breakfast with in 4 hours of waking. 
Sure you can do some fasted cardio. But you STILL need to eat breakfast. 
(Saving fasted cardio for another day.)

Skipping breakfast you'll just be screwing yourself later. It can lead to over eating later, and that will make you gain weight. Why not have the largest meal that will help you concentrate, that will give you energy, and that you have all day to burn off? Research confirms that dieters who skip breakfast tend to gain weight over time (Neumark-Sztainer et al. 2006).                     
                                                                                                                                 
My nutritionally substantial dash and go breakfast: Cookies! 
Having something with the name COOKIE and tastes like a COOKIE for breakfast is a good thing. You will be less likely to indulge on sweets later.


Try a "cookie" that contains s few simple ingredients like Banana, oats, and peanut butter. 
Then add raisins, nuts, and a few chocolate chips!
This mix below is 137 calories per cookie. Eat 2 or 3 (for home or on the go) with your choice of healthy beverage. Or one with some eggs or fruit (eating at home), but still substantial!
1 cookie alone won't cut it you really want to aim for 1/4 to 1/3 of your calories eaten in the morning.


Oven:350
Bake:15 min

2 VERY ripe bananas
1.5 cups oat meal ( Old Fashioned) 
1/3 cup peanut butter (Natural, organic)
1/4 cup raisins
1/4 cup Jumbo chips (jumbo worked out to put 3-4 chips on each cookie)
*cinnamon
*Stevia 
* to taste

PB2 Protein Mug Cake - The Craving Killer

The fascination with mug cakes is winding down. But in the  health and fitness  world they still have a practical place.

Have a craving killer with out packing your body with over processed junk and sugars.

I posted this one on Instagram and didn't think much of it until I thought about my clients and friends who ask me for advice. I think this one is a great way for those who are trying to learn to manage their new life style. Or a great mug cake for the heck of it!


1/8 Cup Natural Cocoa Powder
2 TBS PB2 (With or Without Chocolate)
1/4 Cup + 1 TBS Unsweetened Almond Milk (Vanilla or Plain)
1 Egg
1 TBS Stevia in the Raw (if you use liquid use conversion chart on product)
1/2 Scoop of protein powder (Vanilla or Chocolate, I used EAS Lean 15)
1 TSP of ON Fitness Fiber *Optional

Frosting
1 TBS of PB2
Splash of Almond Milk

Mix all your mug ingredients in a bowl. Pour into a well greased mug or ramekin. Nuke up to a minute. I start off at 45 seconds, and check for consistency. Too long will give you a heavy dried up brick!
While it is in the microwave mix up your frosting with the PB2 and start off with a dribble of almond milk. Keep adding until you reach the consistency you'd like.

*I did add 'ON Fitness Fiber' as an option. When you add more add in's be cautious of how much liquid you add. More things you add, more milk or water you will need. You will want it to look like brownie batter. If it looks a little thick then it will become a brick. Just add a splash when you need it.

I've been cheating on Instagram

What can I say blog, I have been cheating on you with Instagram. And I loved every minute,  it's just  faster for my fast paced life. I have just had no time. Still a SAHM, a gym rat, and boxer. But now add Health & Sports Nutrition, and Personal Trainer.
I have been hitting boys again.... (#sorrynotsorry).
And chilling with my gains...
Eating good, watching a lot of boxing...
I did manage to get dry clothes on....
And then this happened ...
And I am wet again! This day I gave out three black eyes. Umm.. go me.
 Sparring Fridays and Saturdays get dangerous. *Giggle*

Which brings me back to here. Chilling with my gains. I love power lifting, look at those thighs!

Mug Cakes, Mug Muffins, how about a protein CAKE?

The mug food thing reached a frenzy this year, don't you think? It started off with the decadent brownie, then the chocolate chip cookie in a mug. I will be honest, those were freaking good.  But too good. Given I did substitute using  whole ingredients, avoided vegetable oil,  and sugar. I think that is what got every one thinking:  "How can I make this healthier?"
 Many did, and I tried the heck out of them. There's a 100 calorie mug out there. It was like swallowing a sponge.  I would rather have something in a higher calorie content with good things for me than a sponge. Right? How about some protein? Yeah?
I have been doing my own healthy mug cake testing for myself, sharing a long the way on Instagram.  Then there was one little post that got a little more attention than I expected. It is good. Very good.

Things I learned about mug cake testing. If you don't want a dry sponge, or a mug pudding use a bowl. I know its now Bowl Cake. That sounds wrong, mainly in the portion department. But it's not any bigger than any other mug cake.

I went through many bowls and mugs until I found the right one. But if you really do not have anything close to this the best trick is to use the microwave reheating trick. Scootch everything out of the middle using your finger or a spoon. Hollow it out like you're making bunt cake. This way you are avoiding the goo in the middle or having to cook it more and over drying the rest!






The Cherry Mama Protein Mug Cake 

♥2 egg whiles (about 3 TBS of white 28 cal)
♥1/4 Cup Unsweetened Apple Sauce, make it a healthy amount. ( 25 cal unsweetened )
♥1 Scoop of Protein Powder Vanilla or Chocolate  (I used EAS lean for the low calorie count 50 cal.)
♥2 TBS of Coconut Flour (60 cal)
♥*1 TBS of Cocoa Powder (Pure organic Cacao 10 cal per TBS)
♥1/2 tsp Baking Powder
♥Stevia, I used one squirt of Skinny Girl Stevia (equivalent of 1 tsp of sweetener)


173 Calories with cocoa, 163 without. Your calories will vary depending on the brands you buy.


Whisk  ingredients in a bowl thoroughly. Looking for lumps of coconut flour, it tends to be very stubborn! When measuring the apple sauce really make it a healthy portion. Don't make it level, just proud of the measuring cup. Apple sauce really adds the moisture. I scraped it one to make it even and it wasn't the same, a little dry. Once mixed pour into a grease mug. I use an organic olive oil spray. START at 60 seconds in the microwave. Then add 15-20 seconds there after. Mine takes 1 min 20 secs.

*Cocoa powder is optional, protein powder can be pretty sweet. But the cocoa makes it a great treat.

This one below is just Vanilla protein powder. I didn't flip it yet so you can see the top right out of the microwave. You can see I stuck my finger in to test. LOL, I generally test hot things in the worse way. But the texture on top will be slightly soft, but underneath you see a nice sponge cake. This was so delicious.

Running, H.I.I.T's, and a little help with shoe inserts?!

I have a bad back, apparently. But instead of going to countless doctors, and popin' pills I have taken a different route. I see one doctor, he is a bone mover, crusher, and cracker. I speak of the art form of human on human origami called chiropractic-ing? I say origami because there is this one maneuver where my knees and elbows are all 'counter-wonky'. Its now something I look forward to. Sick I know. 
After having my bones shaken out I needed another plan of action. I don't believe sitting idly around stuffing food in my face blaming the world because I am miserable and over weight. No. That's not me. I have always been healthy, and after two  kids, I take back my body. Just this pain in the back issue was getting a little to severe.
So my plan of action was work out, get those muscles strong to hold together my very mad skeleton. And it worked. I ran like the dickens. I ran fast, and for short periods of time. Then I stopped, and then I dropped and did 20, then I ran again, dropped and did some mountain climbers. I did this bizarre flurry of activity in different forms over and over again. The first few times I will admit, died people, just died! But it was over fast, and I reaped the benefits for a long time. Sill am. Look up H.I.I.T's and do it ;-)

The hardest thing to over come was the toe pain! The worse I tell you. I had sleeping toes, and sharp pain toes. Just very angry toes. I bought new shoes, dropped like $180 thinking this was a magical cure, had to be. Yeah no. So back to the drug store to scope out orthopedics. I was buying some strange things like mole skin, and toe pads. eeesh. 


But oh my lucky stars I qualified for a mission from Influenster. They sent me one pair of Dr. Scholl's Active Series inserts. Now after using some strange orthopedic practices, and also having my leg yanked several times by Dr.Jim I was willing to try anything. Here's my first first impression in a video:

After that it was time for a test run. I figured I would do some casual endurance ... jogging, some call it. They were easy to cut to fit. Easy to slip into the shoe. So how did it feel? The inserts do not take up any more room than the insert that came with my over priced shoe :-)
After two days of running I notice NO angry toe. My back and neck did not become stiff. I did not ache the day after like I had just been in a car accident. 
I can happily say that these inserts do stand up to the hype. I am on board with this product.  My best recommendation would be great for new runners. Because when you start to run your body hates you. Until your body gets used to the shift you will want two less things mad at you, your feet. These inserts have helped ease the pain in my bones. Almond Butter Cookies


Like the original article stated: "As a HUMAN, you are obligated to love, cherish and covet the beloved cookie." So true my friend, so true. I eat a Paleo Diet, but even within the Paleo Lifestyle there are debates about how non-Paleo, or Paleo some foods are. I use the tools and ingredients that are available to me in the Paleo spectrum and make stuff (very caveman-ish). I also just love the challenge of creating, or recreating recipes. Thats why when I found Enjoy Life Chocolate Mini Chips at a regular grocery store (and not overpriced) I had to find a recipe to celebrate with.

 Paleohacks.com shared  some great Paleo Cheat Day Recipies. I thought I would give one a try. I don't do cheat days BTW, I do a lot of IF (intermittent fasting).  I have very limited time to get in my calories. So I like to enjoy those few hours without blowing my calorie and sugar intake. I am writing this as the bake, and now are cooling so it could turn out very badly.
 I already had an almond yogurt today, you think I will turn into an almond if I have an almond cookie with almond milk? Here goes....Oh---my-- STARS! These are too good to be  for real. Toddler approved too!


I modified the original recipe and used some of the optional alternatives that were given. I will note those for you so you know what I am raving about. For this I will be in red.


What You Need:
  • 2 cups almond flour (or 1 cup almond flour, 1 cup vanilla protein powder) *I used 1 cup of protein powder
  • ½ cup raw almond butter
  • 2 organic cage free eggs
  • ¼ cup honey (or truvia for calorie free) *I used Stevia, would use just a scant  1/4 cup
  • tsp baking soda
  • tsp vanilla
  • tsp salt *I used 100% natural sea salt
  • 2 cups dark chocolate chips (Enjoy Life is dairy free and is my favorite brand.) * I so agree great brand BUT, I used 1 cup of the minis, and it was PACKED full of chocolate. I could not imagine using 2 cups!!!
What You Gotta Do:
  • Mix all ingredients together in a large bowl.
  • Roll dough into small balls and smoosh lightly onto a cookie sheet lined with parchment paper.
  • Bake for 10-12 minutes in a 375 degree oven.
What I will do next time:
  • Mix dry ingredients
  • whisk eggs separately in a bowl, and then add the almond butter and vanilla
  • add dry  ingredients into wet, and then mix in your chocolate chips.
The only reason I would do it like this next time was because the consistency of the mix. I thought I had mixed it really well, but I still had clumps of protein powder at the bottom. If you use a hand mixer for your almond butter and eggs first you will have a softer texture and dry ingredients will mix in more thoroughly.

Paleo Bread

So I have been a little busy for two weeks...

I have just moved over from Wordpress. No matter what you read it isn't as simple. Even using the converter... my friends it only converts 1 MB at a time. It was a long task, then I had to go back through the posts and edit out the last HTML that was left out, and make sure it all looked the same. Then I got on the PC, a lot of the pictures were huge. It looked all fine and dandy on my ancient Mac Book Air! I also didn't know that if you move, your pictures don't move, they are still hosted by WP. Maybe one day I will slowly replace each picture. But for now I kept the WP site open with blank post and no text, with a redirect link! I was going to make it private so I could just delete the thing later. But if you do that all your photos become un-pinnable! After all that  I am sure there's some wacky looking things and links I have to fix, but for now I am content.

But I am fine with being content, because this is the first time I am getting to write, or touch my kitchen. Soon after the move and clean up I closed my laptop and became ill. Not a sniffle 'I can function kind of sick', but in bed husband at home bedroom DOOR CLOSED!  I add this happened after the weekend both my little ones got pink eye, and then a virus after that. Guess where I got it from. I was a hot mess! It was the sickness I fear, ears and throat. The first few days were miserable, by early Sunday morning like 3 am I was in tears of pain. The ears were now beyond the threshold of normal illness pain. I once got a perforated ear drum being this sick, I was getting scared. Luckily these days medical care has gone beyond going to an Urgent Care where there are a lot of Saturday night left over oddities still lingering in the wait area. I only say that because I did have to go to one in my 20's when I lived down town Denver. All I have to say is never again my friend.
At 3 am my husband googled a place that was an off hospital site clinic that had a walk-in. At this point I didn't care. I drove myself there at 8 am when they opened. Hubby was at home because the kiddos still had that second virus. Luckily it was a quick process, and no it wasn't scary. My sickness was bad enough they prescribed me these horse sized antibiotics! After two days, I am down graded from death to sick! Yay me! Some body really should put a biohazard sign on our door and rope off the house in yellow CDC tape.

OK, so to present day, getting an appetite back, I am hungry! With no bread in sight I had to whip some together. After I made my families granola bars. My will power stopped me from diving in to the batch I am a Paleo Mama now.  I didn't decide to 'go Paleo' I sorta just had to. I discovered no matter how healthy I ate, I still was blowing up. Once I cut out the dairly, and gluten I started to feel amazing. After the first two weeks I feel like a changed woman, and not puffy. I think thats where my will power came from. I have flushed my system out!



Time to experiment with my second Paleo bread. I found  Bread 2.0 still a very simple bread, but with the addition of flaxseed which I love, and arrowroot powder (actually had this on hand). This is an awesome bread. Unlike the Savory Almond Bread this came out more like bread, as in NOT dessert and I can make a sandwich out of it. OK, really I was so hungry I ended up putting almond butter butteron a slice and making that my lunch.  I just made granola bars, fed two kids put them to nap, and not a bit for me, I am dying here people. Also my poor hubby dying on the couch with the sickness... glad HE didn't want food! *sheesh* Families huh!? 

Bread 2.0


  1. In a medium bowl, combine almond flour, arrowroot, flax meal, salt and baking soda
  2. In a larger bowl, blend eggs 3-5 minutes until frothy
  3. Stir agave and vinegar into eggs
  4. Mix dry ingredients into wet
  5. Scoop batter into a well greased small-medium
  6. Bake at 350ยบ for 30-35 minutes, until a toothpick inserted into center of loaf comes out clean
  7. Cool and serve
Makes 1 medium sized loaf

Apple and Aloe cleansing slim tea.




OK stay with me here but there's more: Apple, ACV (apple cider vinegar), Aloe Vera, Blueberry Slim tea. I had whipped this up the other day to test out how it actually tasted. Knowing about all the great beneficial properties of all these ingredients I thought I would combine them in a time saving effort. If you are like me and are on any sort of supplement regimen;  you're trying to get in all your water , meals and supplements and you are left with no time to do anything! Natural remidies take some dedication, and I am in a commitment at the moment.

I was also inspired by Bragg's ACV drinks. They are super tasty, but I wanted to utilize my healthy teas. I really wanted to figure out a combination that will taste great because ACV can be very over powering.  I don't like to drink a lot of straight juice due to the sugar overload, and adding ACV was more like a punch in the mouth. Woah! I used to just take my ACV as shot with lemon juice. Some days it would make me sick, I also found that too much undiluted ACV can hurt your esophagus and of course damage your teeth. Yikes!

Let's talk about my choice of ingredients and why I chose them. My base are teas are fruit teas. These are some of the least bitter and will add flavor, and balance and won't be too over powering like straight juice. The teas I was drawn too were Yogis Blue Berry Slim tea and Lipton Superfruit Green Tea; Acai and Blueberry. The fruit teas have added benefits along with great flavor :-)

 Aloe vera is known for its detoxification abilities and acts as a laxative and hence it is regarded as an effective colon cleanser.The medicinal properties present in aloe vera gel will not only improve the condition of your colon health, but it will also treat other health problems such as headache, skin infection, diarrhea, gastric pain and constipation.

Fresh apple juice is one of the best home treatments for colon cleansing. Regular intake of apple juice encourages bowel movements, breaks down toxins and improves the health of liver as well as the digestive system.


Apple Cider Vinegar every ones favorite right now also packs a healthy punch also. Apple Cider Vinegar may help improve bowel irregularity, thereby removing toxins from the body at a faster rate. Helps clear up skin conditions and blemishes giving a more smooth texture and appearance. Always make sure it's Organic with the "mother", this is where you will get the concentration of  nutrients. 

Raw Organic Apple Cider Vinegar (ACV) is made from nutritious, organically grown apples and retains many beneficial components because raw apple cider vinegar is not pasteurized. ACV undergoes two fermentation processes where it produces enzymes and life giving nutrients that make apple cider vinegar the powerhouse it is.


The first mix I did was in a 32 ounce bottle, the next day I doubled it!

Fill half your bottle with hot water, seep your tea bags( 1 of each) for minimum of 5 minutes.

Add 4 ounces of  aloe vera juice

2 ounces of Bragg's  ACV

4-6 ounces of apple juice*  (more for taste, but you might be surprised. Start with less)

Fill last few ounces with filtered water.

Enjoy warm, or pour on ice. I like to just keep it in its bottle and drink it warm to room temp. It fills me up and I also avoid snacking. 

*Two recommendations for apple juice, either a 100% organic with all the good chewy bits in it. I like to get the Santa Cruz brand, they come in a cool glass jug (for those later moon shinning efforts). I was able to get that at King Soopers/Kroger. Another option if you can't make it to a natural grocer is Healthy Balance less sugar than the Natural stuff.
